Serves six
You need
1 tsp olive oil
12 eggs, beaten
200gr cooked diced potato
2 grilled good quality sausages, sliced
200gr dry fried mushrooms
100gr dry fried bacon lardons
2 tbsp fresh parsley, chopped
415gr can Heinz Beanz, drained
Method
Preheat the oven to 200˚C (gas mark 6). Heat the oil in a large, shallow, non-stick, ovenproof pan.
Mix the eggs with all the other ingredients and season. Pour the egg mix into the pan, stir a couple of times then bake in the oven for 15 to 20 minutes until set. Serve hot or cold.
