Serves four
Ingredients
24 slices Granny Smith apples
16 red prawns
100g cream cheese
Herb oil
Rock salt and pepper
Method
Thinly slice the 24 apples. Cut each prawn in three pieces and put them in the middle of the sliced apples. Fold the apple in half.
Pipe six small blobs of cream cheese on each plate.
Arrange the apple pockets above the cream cheese and place the remaining prawn pieces in between as shown in the picture.
Drizzle some herb oil around the apple pockets and season with rock salt and pepper.
