Pastry chef Christopher Zammit has, for the third consecutive year, lifted the gold medal at Hotelympia 2010, the showcase for the catering industry, held in London earlier this month.
His rodeo sculpture earned him the coveted gold medal in the Works in Fat category.
His other exhibit in the sugar category, Miniatures of the Pastry Category, depicting a rider flying off his bike, also garnered him gold besides being judged best in class.
Mr Zammit, from Pembroke, has been working in Eastbourne, UK for the past two and a half years and is no newcomer to Hotelympia.
He made his debut in Works in Fat in 2008, winning his first gold. Last year, he was again successful placing first in this category.
