Phoenicia launches Bastion Pool, Bar & Restaurant for summer 2026

Hotel’s garden pool venue beside Valletta reopens with a seasonal menu, business breakfasts and evenings of Mediterranean barbecue with live music

The Phoenicia Malta has officially launched its Bastion Pool, Bar & Restaurant for summer 2026.

The popular seasonal dining destination features an infinity pool flanked by Valletta’s bastion walls, with the hotel’s seven acres of landscaped gardens on one side and Marsamxett Harbour on the other.

By day and on Wednesday evenings, the restaurant serves an à la carte menu shaped by the season and the sea, with dishes including sushi, ceviche of the day, seared scallops and a salad of fresh local ġbejna with tomato and basil. Poke bowls, a smash burger and a grilled ribeye of beef sit alongside lobster linguine, while the bar pours spritzes built on Maltese bajtra, house cocktails and a local and international wine list.

After dark, the setting shifts for Nights Under the Stars, the venue’s summer evening programme. Every Tuesday and Thursday, BBQ Under the Stars reimagines the traditional Mediterranean barbecue.

The menu opens with starters such as swordfish carpaccio, while mains include seafood such as Ostra Bora N.3 oysters from the Veneto region and butcher’s choice meats cooked in various methods, all complemented by a selection of fresh salads.  Crushed kannol, chef-made sorbet or crème brûlée top the dessert menu.

Live music accompanies each evening beside the floodlit 16th-century bastions, with acoustic sets with Amelia playing on Tuesday, a jazz quartet with Dominic Galea on Wednesday and Steve Galea on guitar on Thursday.

Summer mornings are also embraced this year. Mid-morning breakfasts start at 10.30am, ideal for intimate business gatherings and events at an unusual venue near the capital. Breakfast at the Bastion might follow a meeting held elsewhere in the hotel, or even a yoga session in the gardens to begin the workday with wellness.

Bastion Pool, Bar & Restaurant also welcomes Kevin Alipustain as its manager, who brings his experience from the Palm Court Lounge to the hotel’s outdoor summer destination.
