The promotion of a local food culture that reflects the Maltese identity was Fondazzjoni Fuklar's driving force when it was established in April 2001.
As part of its commitments, the foundation is expected to hold a series of lectures on Maltese food culture, especially because study units on Maltese food did not exist at the Institute for Tourism Studies, Julian Sammut, a trustee of the foundation, told The Times yesterday.
The foundation also intends to involve local producers and food establishments in training programmes, he said.
The Fondazzjoni Fuklar had set itself the task of raising awareness about Maltese food, to conduct research on it, to publish articles and to involve local tourist operators in organising food tourism.
Mr Sammut, a restaurateur, said food was a tourist niche that had been successfully explored elsewhere and Malta should follow suit.
