Chef de cuisine and co-owner Jonathan Brincat, known informally as Noni after his family’s nickname, has lent his flair in the kitchen to many renowned locations in Malta and overseas before starting his new journey at Noni, in Republic Street, Valletta.

Brincat, who formed part of a team winning the title of Best Upcoming New Restaurant category at The Definitely Good Guide awards, said: ‘’This new venture will be presenting the name Noni as a fresh but experienced taste to the Maltese islands. Our idea is to enhance the simplicity and truth of the ingredient,” added Brincat. “Our food will reflect us as individuals; skilled but without pretensions, warm and welcoming.”

The chef’s sister, Ritienne Brincat, comes with 12 years of experience of the high-end food and beverage sector, and is in charge of service.

The cuisine will be genuine and local, and will also highlight the freshness of seasonal ingredients. Highlights of the menu include, as a starter, cured mackerel, smoked mackerel pâté, pomegranate and cucumber dressing, followed by seared bavette of beef, confit tomatoes, garlic and parsley purée and beet broth as a main. To end such a meal, Ritienne would recommend the Te fit-tazza black tea and condensed milk mousse, lemon ricotta, lemon froth.

The variety of dishes will be paired with an extensive wine list curated by Ritienne and her team, which will complete the dining experience.

Noni, at 211, Republic Street, Valletta, will be open six days a week from Monday to Saturday for dinner, and between Thursday and Saturday also for lunch. Seating is limited and reservation is advised. For more details, visit www.noni.com.mt.
